Now it’s an adjustment – I really, really miss the “PING” when I bring the jars out of the canner but I’m sure I’ll get used to canning without that magical sound. Steam canners are not recommended because processing times for use with current models have not been adequately researched. Pickling (preserving in brine) and canning were regularly employed in pre-industrial times. They are the ultimate authority, and their site is loaded with detailed information and recipes suited for canning.
