There’s the locavore movement: If you want to eat locally and have variety through the winter and live in a colder place, as I do, then you’ve got to can. Place cans on the floor of a moderately hot oven, protected by a sheet of asbestos paper, or set in a pan of hot water. Jars that will be processed in a boiling water bath canner for less than 10 minutes, once filled, need to be sterilized first by boiling them in hot water for 10 minutes before they're filled. Canning your food allows it to stay good for a year or more.
